Census Bureau tosses US salad just for fun

WASHINGTON, July 23 /U.S. Newswire/ -- Following is the daily "Profile America" feature for July 24 from the U.S. Census Bureau:SUNDAY, JULY 24: SALADS
Profile America for Sunday, July 24. Not too many years ago, the average restaurant customer would have angrily sent back the kind of salad being served today -- criticizing the mixed greens as weeds and grass clippings and demanding a wedge of iceberg lettuce with thousand island dressing. Today's salads are a often a mix of arugula, spinach, escarole and other colorful greens. Yet this modern mix is typical of some of the salads served in England in the 16th century. This coming week is National Salad Week, aimed at letting consumers know the importance of including more raw vegetables in their diet. The average American eats 193 pounds of fresh vegetables each year. Potatoes top the list at 45 pounds, followed by head lettuce at 22 pounds and 19 pounds of onions.
